Poppy Seed Lemon Waffles

I know loads of people are starting to release their fall recipes. I am just as eager to share mines with you. However, I feel that when this happens all of the seasons seemed rushed and one doesn't get to live in the "now" - all of this just to say live to enjoy the moment. 

These poppy seed lemon waffles are great for a weekend brunch. Enjoy the last bit of summer and throw all the outdoor get togethers before the weather changes. 

Let's get started. 

Poppy Seed Lemon Waffles Printable Recipe
2 Cups All Purpose Flour
1 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Tsp. Kosher Salt
3 Tbsp. Granulated Sugar
1 Lemon, zested and juiced
3 Large Eggs
4 Tbsp. Butter, melted
2 Cups Buttermilk
1 Tsp. Vanilla Extract
1 1/2 Tbsp. Poppy Seeds

Lemon Whipped Cream
1 Cup Heavy Cream
2 Tbsp. Powdered Sugar
1 Lemon, zested and juiced

Toppings: Syrup, Berries

Sift together the flour, baking powder, baking soda, and salt. Set aside.

Mix together the sugar and lemon zest until well combined and stir it into the flour mixture.

In a large bowl, add the melted butter, eggs, vanilla extract, lemon juice, buttermilk, and mix until well combined. Stir in the flour and mix until combined. A few lumps left is totally fine.

Heat up your waffle iron and cook your waffles according to the manufactures instructions. 

Top your waffles with your berries, maple syrup, whipped cream,  serve and enjoy.

To make the whipped topping, in a large bowl add in the heavy cream, powdered sugar, lemon juice and zest. Using an electric whisk, beat together until fluffy.

Serve and enjoy.
