This salad is a great way to eat up the wonderful stone fruit that is currently in season. Super easy, flavorful, and satisfying. You can add grilled chicken, shrimp, steak, or leave as is. Burrata would also go great in this salad.

Stone Fruit Salad Printable Recipe
5 Oz. of Arugula (or mixed greens)
2 Avocados, sliced
2 Peaches, sliced
1 Nectarine, sliced
4-6 Persian Cucumbers
Prosciutto (optional)
Pinch of Salt
1/2 Tsp. Freshly Ground Black Pepper
1 Small Shallot, minced
2 Cloves of Garlic
1/2 Cup Freshly Grated Parmesan Cheese
1/4 Cup Extra Virgin Olive Oil
1 Tbsp. Champagne Vinegar
1 Lemon, Juiced
In a small blender add in the olive oil, champagne vinegar, lemon juice, salt, pepper, shallot, garlic, and parmesan cheese. Blend until smooth. Taste and adjust salt and pepper if needed.
In a large salad bowl, add in your arugula, avocado, peaches, nectarine, cucumbers, prosciutto, and toss in your dressing.
Serve and enjoy.
