Aguachile

A simple but refreshing dinner idea. For those hot days that you just can't be bothered to use the stove. You can reduce the amount of jalapenos if you don't like super spicy food.

Aguachile Printable Recipe
2 lbs. Shrimp, peeled and deveined
6-8 Jalapenos, seeded
1/2 Cup Cilantro
15-20 Limes, juiced
Salt
Freshly Ground Black Pepper
1 Cucumber, peeled and thinly sliced
1 Red Onion, thinly sliced
2 Avocados
Tostadas for serving

In a blender add in the jalapenos, cilantro, lime juice, a good pinch of salt and pepper. Blend until smooth.

In a large bowl, add in your shrimp, lime juice mixture, onion, and cucumbers. Allow the Aguachile to cure for a minimum of 1 hour.

Serve alongside some tostadas, top with avocado, and enjoy.
