This is a spectacular salmon recipe if I do say so myself. The creamy slightly spicy tomato sauce compliments the salmon perfectly. Serve it with steamed rice, a baguette, or whatever you like.

Salmon in Tomato Sauce Printable Recipe
4 Salmon Fillets, skin removed
1 Tbsp. Olive Oil
4 Oz. Chorizo (half of Cacique Pork Chorizo package)
4 Cloves of Garlic, minced
1 Shallot, finely chopped
1 Cup Tomato Sauce
3/4 Cup Heavy Cream
1/2 Cup Parmesan Cheese
1/4 Cup Sun Dried Tomatoes, thinly sliced
1 Tsp. Red Pepper Flakes
2 Tbsp. Fresh Oregano, finely chopped
Kosher Salt
Freshly Ground Black Pepper
Chives, for garnish
Season the salmon on both sides with salt and pepper.
In a large skillet, using medium high heat, add in the oil and the salmon, cook for 1-2 minutes on each side. Remove from the pan and set aside.
In the same skilled add in the chorizo, garlic, shallot, sun dried tomatoes, red pepper flakes, and sauté until the shallots have slightly softened.
Add in the tomato sauce, oregano, heavy cream, a pinch of salt and freshly ground black pepper and stir. Add the salmon back into the skillet to finish cooking. Or done you your desired preference.
Top with chives, serve, and enjoy.
