Valentine's Day Dinner

Valentine's dinner at home since Covid. A simple three coarse meal complete with sides, and a dessert because being extra for today is okay. 

Let's get started.

Ribeye Steak Printable Recipe
2 - 1 1/2 inch thick Bone in Ribeye Steaks
1 Tbsp. Olive Oil
1 Tsp. Salt
1/2 Tsp. Freshly Ground Black Pepper
1/2 Tsp. Garlic Powder
1/2 Tsp. Onion Powder

Pat your steak dry and in a small bowl mix your seasoning together, Rub your steak with olive oil and sprinkle evenly with seasoning mixture. Let it sit on your counter top for 20-25 minutes.

Pre-heat your grill. Grill your steaks 4-6 minutes on each side. 

Remove your steaks from the grill and let rest 6-8 minutes.

Slice your steak and serve.


Chimichurri Printable Recipe
1 Cup of firmly packed Parsley, stems removed
5-6 Cloves of Garlic
2 Tbsp. Fresh Oregano
1 Tsp. Fresh Thyme
1 Tsp. Fresh Rosemary
1/2 Tsp. Kosher Salt
1/2 Tsp. Freshly Ground Black Pepper
1/4 Tsp Red Pepper Flakes
1/3 Cup Olive Oil
2 Tbsp. Red Wine Vinegar

Add all of the ingredients into a food processor or blender. Blend until well combined.

Remove from food processor and onto a serving bowl and set aside until ready to top your steak or serve on the side.


Roasted Potatoes Printable Recipe
1 lb. Small Yukon Gold Potatoes
Salt
Freshly Ground Black Pepper
1 Tbsp. Rosemary, finely chopped
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
5-6 Tbsp. Olive Oil

Boil your potatoes in heavily salted water until just fork tender about 10-15 minutes. Drain and let dry.

Pre-heat your oven to 375 degrees Fahrenheit. 

Cut your potatoes in half and place them on a large baking sheet. Add olive oil, salt, black pepper, rosemary, garlic powder, onion powder and toss to coat.

Bake for 30-40 minutes making sure to toss half way. Remove from the oven once the potatoes are golden brown. 

Serve and enjoy.


Parmesan Roasted Broccoli Printable Recipe
1 1/2 Lbs. Broccoli 
Garlic Salt
Freshly Ground Black Pepper
Pinch of Red Pepper Flakes
5 Tbsp. Olive Oil
1/4 Cup Parmesan Cheese

Preheat your oven to 375 degrees Fahrenheit. 

In a large baking sheet, add your broccoli, sprinkle with garlic salt, black pepper, parmesan cheese, and a pinch of red pepper flakes. 

Drizzle evenly with olive oil and toss to coat.

Bake for 20-25 minutes or until the broccoli is slightly charred and fully cooked through, remove from the oven and top with additional parmesan cheese.

Serve and enjoy. 

Red Velvet Cheesecake Brownies Printable Recipe
1/2 Cup Unsalted butter, softened
1 Cup Granulated Sugar
1/2 Tsp. Kosher Salt
2 Eggs
3/4 Cup All Purpose Flour
3 Tbsp. Cocoa Powder
1 Tsp. Vanilla Extract
1 Tsp. Distilled Vinegar
Red Food Coloring

Cream cheese filling
8 oz. Cream Cheese, softened
1 Egg
3 1/2 Tbsp. Granulated Sugar
1 Tsp. Vanilla Extract

Grease an 8x8 inch square baking pan and line with parchment paper.

Pre-heat your oven to 350 degrees Fahrenheit.

In a large bowl, add the butter and sugar and using an electric mixer, mix together for 3-4 minutes or until light and fluffy. 

Add in the eggs and vanilla extract and mix until well combined. Sift in the cocoa powder and mix. Add in the vinegar and mix, add in a couple of drops of red food coloring and mix. Sift in the flour and mix until just combined. Set aside.

In a separate bowl add the cream cheese, egg, sugar, and vanilla extract and mix until well combined.

In your prepared pan add in your brownie batter making sure to reserve 1/4 of the batter. 

Add in your cheesecake batter on top and dollop the remaining brownie batter on top of the cheesecake layer. Using a butter knife, swirl the remaining brownie batter into the cheesecake mixture.

Bake for 30 minutes or until fully cooked through. Remove from the oven and let the brownies cool completely.

Cut into squares and enjoy.
