Lemon Ricotta Berry Waffles Printable Recipe
1 1/2 Cup All Purpose Flour
2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/2 Tsp Salt
3 Tbsp. Granulated Sugar
2 lemons, zested and juiced
1/3 Cup Unsalted Butter, melted
2 Eggs
1 Tsp. Vanilla Extract
1/2 Cup Ricotta Cheese
3/4 Cup Milk
Toppings:
1 Cup of your favorite berries
Warm maple syrup + zest of 1 lemon
OR an amazing berry and lemon ricotta compote, recipes down below.
Sift together the flour, baking powder, baking soda, and salt. Set aside.
Mix together the sugar and lemon zest until well combined and stir it into the flour mixture.
In a large bowl, add the melted butter, eggs, vanilla extract, lemon juice, ricotta cheese, milk, and mix until well combined. Stir in the flour and mix until combined. A few lumps left is totally fine.
Heat up your waffle iron and cook your waffles according to the manufactures instructions.
In a small sauce pan heat up maple syrup and mix in lemon zest.
Top your waffles with your berries, maple syrup, serve and enjoy.
Lemon Ricotta Cream
1 Cup Part-Skim Ricotta
1 Tbsp. Powdered Sugar
1 Tsp. Lemon Zest
1 Tsp. Lemon Juice
In a bowl combine ingredients together. Set aside until ready to serve.
Berry Compote
1 lb. Berries
2 Tbsp. Honey
1 Tsp. Lemon Juice
In a sauce pan using medium heat, add all the ingredients and stir. Keep cooking and stirring for 8-10 minutes.
Remove from heat, let cool slightly, and serve.
Top waffles with ricotta cream and berry compote, serve and enjoy.
