Chicken Stir Fry

Easy dinners have been my go to lately. This is sticky, sweet, with a little bit of heat. So good and perfect for a weekday dinner.

Let's get started.

Chicken Stir Fry
2 Lbs. Boneless Skinless Chicken Breast, thinly pounded and sliced 
1/2 Cup All Purpose Flour
2 Tsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper Pepper
1 Cup Honey
1/4 Cup Soy Sauce
3 Tbsp. Apple Cider Vinegar
8-10 Cloves of Garlic, minced
1 Tsp. Freshly Grated Ginger
1/2 Tsp. Red Pepper Flakes 
2 Tbsp. Butter
2 Tbsp. Olive Oil
2 Bell Peppers, thinly sliced
1 Onion, thinly sliced

In a large bowl combine the flour, salt, pepper, and stir until well combined. Add your chicken to the flour mixture and coat evenly. Making sure to shake off any excess flour.

In a medium bowl combine the honey, soy sauce, apple cider vinegar and mix until well combined. Set aside until needed.

In a large skillet, heat up the butter and oil and add in your chicken. You may have to cook it in batches so it can get even browning on all sides.

Once all of the chicken has been browned add it all back into the skillet along with the bell peppers, garlic, ginger, and red pepper flakes. Let it sauté for 3-4 minutes.

Add in your sauce and let the chicken continue to cook in the sauce for an additional 3-4 minutes or until fully cooked. Making sure to keep constantly stirring.

Remove from heat and serve alongside white rice and roasted broccoli. 

***To make this gluten friendly feel free to sub cornstarch for the flour.***
