Greek Chicken Kabobs Printable Recipe
4 Tbsp. Olive Oil
2 Lemons, zested and Juiced
1 Tsp. Paprika
2 Tsp. Oregano
2 Tsp. Basil
1 Tsp. Thyme
4 Cloves of garlic, minced
1 Shallot, minced
1 Tsp. Salt
1 Tsp. Freshly Ground Black Pepper
2 lbs. boneless skinless chicken thighs, cut into 1 inch pieces
12 skewers
In resealable bag add in all of the ingredients and let marinate for a minimum of 30 minutes or maximum of 4 hours.
Skewer the chicken onto the kabobs and grill for 10-12 minutes or until fully cooked through.
Serve and enjoy.
Classic Greek Salad Printable Recipe
1 Small Red Onion, halved and thinly sliced
1/4 Cup Red Wine Vinegar
Salt
Freshly Ground Black Pepper
1 Lemon, Zested and Juiced
1 Tsp. Honey
1 Tsp. Oregano
1/4 Cup Extra Virgin Olive Oil, plus more for drizzling
12-14 Small Vine Ripened Tomatoes, quartered
1 Cup Kalamata Olives, pitted and halved
5 Persian Cucumbers
4 oz. Feta Cheese
Fresh Oregano to topping
In a small bowl, whisk together the vinegar, honey, olive oil, pinch of salt, pepper, lemon juice and zest.
In a salad bowl toss all of the ingredients together. Top with feta and enjoy.
