Gingerbread Waffels

Gingerbread waffles for the most wonderful time of the year. These are perfect to make during the holiday season.

Gingerbread Waffles Printable Recipe
2 Cups All Purpose Flour
2 Tsp. Baking Soda
1 Tsp. Baking Powder
1/2 Tsp. Salt
2 Tsp. Cinnamon 
2 Tsp. Ground Ginger
1/2 Tsp. Ground Cloves
4 Eggs, Separated
2 Cups Buttermilk
1/2 Cup Vegetable Oil
1 Tbsp. Vanilla Extract
1/2 Cup of Molasses

Sift together the flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves. Set aside.

In a separate bowl, using an electric whisk. Whisk the egg whites until stiff peaks form and set them aside.

In a large mixing bowl, add the buttermilk, egg yolks, vegetable oil, vanilla extract, molasses, and whisk to combine. Add in the flour mixture and mix until well combined.

Gently fold in the egg whites into the waffle batter and then set the batter aside for 8-10 minutes. 

Heat up your waffle iron and spray with non stick spray. Pour the batter into your hot waffle iron and cook according to the manufacturers instructions.

Dust with cinnamon sugar if your so inclined and serve along with warm maple syrup infused with a little lemon zest.
