Shrimp Tostadas

This is an easy summer meal, perfect for lunch or a light dinner. Goes great with a nice ice cold beer, or freshly made lemonade. 

Shrimp Tostadas Printable Recipe
1 lb. Peeled deveined Shrimp
Salt
Freshly Ground Black Pepper
1 Lemon
1/2 Red Onion, finely diced
1/2 Cup Cilantro, finely chopped 
1 Avocado, sliced
1 Tomato, finely diced
1/2 Cup Mayo or Creama
Tostadas

Boil the shrimp with the lemon peel and a pinch of salt until just cooked through. Drain and let cool.

Grab a tostada and smear some mayo or creama, top with the shrimp, freshly ground black pepper, onion, cilantro, a squeeze of lemon, some slices of avocado, and a dash of hot sauce. 

Serve and enjoy.

Habanero Salsa
2 Habaneros, seeded and finely chopped
3 Tomatoes, diced
1/2 Red Onion, finely diced
Salt
2 Limes 

In a small bowl, combine the habaneros, tomatoes, onion, lime juice and stir to combine. Season with salt and set aside until ready to use. 

If you don't want it too spicy start off with 1 habanero and adjust to your liking.
