I am so excited that we are allowed small gatherings right now. Nothing is more perfect then being surrounded with your favorite people and delicious food.

Honey Ricotta Crostini Printable Recipe
1 1/2 Cups Fresh Ricotta
2 Tbsp. Honey
2 Tsp. Thyme
1/4 Tsp. Coarse Sea Salt
1/8 Tsp. Freshly Ground Black Pepper
Extra Virgin Olive Oil
Crostini
Warm through the honey and thyme in a small pot until just heated through.
Add the ricotta, salt, pepper, and mix until combine in a bowl, and top with the warmed honey. Serve with a small drizzle of olive oil, crostini and enjoy.
Grilled Shrimp Skewers Printable Recipe
1 lb. Large Shrimp, peeled and deveined
Zest and Juice of 1 Lemon
1-2 Garlic Cloves, finely grated
2 Tbsp. Olive Oil
Salt
Freshly Ground Black Pepper
1 Red Bell Pepper, seeded and cubed
1 Yellow Bell Pepper, seeded and cubed
1 Red Onion, cubed
1 Tsp. Oregano
12 Skewers
In a bowl, combine the zest and juice of 1 lemon, garlic, olive oil, oregano, a pinch of salt, and freshly ground black pepper. Stir to combine.
Toss the onion and peppers in the marinade and with a slotted spoon remove them from the marinade.
Toss the shrimp in the remaining marinade. Then skewer the shrimp, onion, and peppers. Making sure to alternate between the three.
Pre-heat your grill or grill pan.
Grill the skewers on high for a minute or two on each side. Serve with the following sauces and enjoy.
Romesco Sauce Printable Recipe
1/4 Cup Extra Virgin Olive Oil
1/2 Cup Sliced Almonds
3 Garlic Cloves
1/2 Tsp. Paprika
2 Tsp. Sherry Vinegar
16 oz. Jar Roasted Red Peppers
Salt
Freshly Ground Black Pepper
In a food processor or blender, blend all of the ingredients until they are fully combined. Taste and adjust seasoning to your liking.
Avocado Salsa Printable Recipe
3 Avocados
1 Tomato
1/2 Red Onion
1 Cup Cilantro
1 Jalapeno, seeded
1 Lime
1 Lemon
Salt
Pepper
Dice the avocados, tomato, onion, cilantro, jalapeno and stir to combine.
Squeeze in the lime and lemon juice season with salt and pepper making sure to stir thoroughly.
Serve and enjoy.
Grilled Steak Skewers Printable Recipe
1 lb. Sirloin Steak, cut into 1 inch cubes
1 Tbsp. Dijon Mustard
2 Tbsp. Fresh Rosemary, tender leaves only
4 Cloves of Garlic, minced
2 Tbsp. Balsamic Vinegar
2 Tbsp. Lemon Juice
1/4 Cup Olive Oil
1/2 Tsp. Freshly Ground Black Pepper
1/2 Tsp. Salt
1 Red Onion, cubed
1 Red Bell Pepper, seeded and cubed
1 Green Bell Pepper, seeded and cubed
In a bowl, combine the mustard, vinegar, garlic, rosemary, lemon juice, olive oil, salt, and pepper. Stir to combine.
Toss in the cubed steak and coat evenly. Let marinate for 1 hour.
Pre heat the grill or grill pan. Remove the steak from the fridge 20 minutes prior to grilling.
Thread steak, peppers, and onions onto a skewer making sure to alternate between the three.
Grill the skewers for 3 to 4 minutes on each side.
Serve and enjoy.
Banana Boats (serves 6) Printable Recipe
6 Bananas
2 Bars of Milk Chocolate
1 Cup Mini Marshmallows
Grill the bananas on low to medium heat until the skin is blackened on all sides and the flesh is tender about 15 to 20 minutes.
Split open and top with pieces of chocolate and some marshmallows.
Continue to grill until the chocolate and marshmallows have melted, about two minutes.
Serve and enjoy.
