I think we can all agree this years Easter is going to be very differnet from any previous ones. I am writing this earlier then Easter Day, which lands on April 12th this year. I honestly don't know how long the Shelter in Place Order is going to last. I wanted to write down what I am planning on doing and what we are planning on eating.
I have only been to the grocery store two times in March and I am only planning on going twice in April. So I wanted to write down our menu so I can try to pick up as many of the things I need for our Easter dinner. I might end up doing an order pick up at Target for a couple of things for my daughter's Easter basket or just have a scavenger hunt of random things we already have.
Let's get started.
Orange Glazed Ham Printable Recipe
1 8-10 lb. fully cooked Spiraled Ham
Juice and Zest of one Orange
1 Jalapeno, seeded and finely chopped
1/2 Cup Honey
1/2 Tsp. Ground Cloves
1/2 Tsp. Ginger Powder
1/2 Tsp. Garlic Powder
1/2 Tsp. Onion Powder
1 Cup Brown Sugar
1/4 Tsp. Freshly Ground Black Pepper
Pinch of Salt
Equipment Needed
Caramelized Carrots Printable Recipe
1 lb. Carrots, washed, peeled, cut on a diagonal
Salt
Freshly Ground Black Pepper
1 Tbsp. Fresh Rosemary, finely chopped
1 Tbsp. Butter
1 Tbsp. Extra Virgin Olive Oil
Sauté the carrots in the butter and olive oil for 3-5 minutes.
Add in the rosemary, a pinch of salt, and freshly ground black pepper. Sauté for an additional 2-3 minutes or until the carrots are tender. Taste and adjust seasoning to your liking.
Serve and enjoy.
**note I will also be serving baked potatoes along with the ham and glazed carrots.**
Pineapple Lush Cake Printable Recipe
1 Box Yellow Cake Mix
1 20 oz. Can Crushed Pineapple, undrained
1 3.4 oz. Pkg. Instant Vanilla Pudding
1 Cup Cool Whip
Make yellow cake mix according to the directions listed on the package. Once baked let the cakes cool completely.
Mix the crushed pineapple and dry pudding mix in a medium bowl using an electric whisk mix until combined.
Gently fold in the whipped topping into the pineapple mixture.
Stack the cake layers, spreading the pineapple pudding mixture in between the layers and on top of the cake.
Refrigerate for a minimum of one hour.
Serve and enjoy.
**Side note: Top cake with fresh berries if you have any on hand.**
You can also make cupcakes instead of cake and top with the pineapple lush mixture.

Aluminum Roasting Pan (for easy clean up)
Oven Bag
Remove your ham from the refrigerator and let sit at room temperature for at least 1 hour.
Pre-heat the oven to 325 degrees Fahrenheit.
Open up your oven bag and place inside of your roasting pan. Place the ham inside the bag and tie it up together.
Bake the ham for an hour.
Meanwhile, combine the glaze ingredients in a small pot and bring the mixture to a simmer. Once simmering remove from heat and set aside.
After the first hour of the ham cooking remove the ham from the oven bag, leaving any juices the ham has released inside of the roasting pan.
Pour the glaze over the ham, making sure to get some inside each crevice.
Return the ham back to the oven and continue to bake for an additional 30-45 minutes. Making sure to base the ham with the juices and glaze mixture that has accumulated into the bottom of the roasting dish every 10-15 minutes.
Remove the ham from the oven once it is nice and caramelized all over.
Let Rest for at least 15-20 minutes, carve, serve, and enjoy.
