With the shelter in place order it is imperative to try to live life as normal as possible.
While we are obviously allowed out for essentail items. I have noticed that the parks near me have been recently visited by large amounts of crowds. That does not help with social distancing.
Let's be mindful of our hardworking Medical Personal and try to stay home as much as possible. They risk thier lives every single day and are exposed to so many things.
I know we all are missing friends and family, and I for one will never take another hug for granted. However, let's all try to stay home as much as possible. There is always facetime, zoom, call, texting, so many options available to us to communicate with our loved ones.
If you have a backyard and a grill available to you that is great during a time like this, you're still able to enjoy being outside while maintaining a safe distance from everyone else. However, if you only live in an apartment it can feel a little claustrophobic to stay in.
Let's all take advantage of this time to read a book, watch a new tv show, listen to an interesting podcast, or try your hand at cooking, baking, grilling, sewing, whatever you fancy.
I have been making great use of my indoor grill pan. I have decided to do an indoor addition to my BBQ around the world series.
Let's get started!!
Grilled Pork Chops Printable Recipe
6 Pork Chops
1 Tsp. Salt
1 Tsp. Fresh Ground Black Pepper
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1/2 Tsp. Ground Ginger
1-2 Tbsp. Vegetable Oil
Mix together spices and sprinkle evenly all over both side of the pork chops. Let the pork chops rest 15 minutes before grilling.
Heat up the grill pan with vegetable oil on medium high heat. Grill the pork chops for 4-6 minutes on each side. Remove from the grill pan and place them on a baking sheet.
Pre-heat your oven to 350 degrees F. Bake the pork chops for 10-15 minutes or until fully cooked through.
*Note: If you are missing any of these spices feel free to omit or use whatever you have on hand.**
I like to serve this with white rice and grilled onion, peppers, and potatoes.
"Foil Packet" Veggies Printable Recipe
1 Onion
1 Green Bell Pepper
1 Red Bell Pepper
1 lb. Cherry Tomatoes
2 Pre-Boiled Potatoes
1-3 Cloves of Garlic
1 Tsp. Fresh Rosemary
Salt
Freshly Ground Black Pepper
1 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Butter
Chop all of the vegetables into bite sized pieces. In a pan add in the olive oil and butter. Heat to medium high heat.
Add in the vegetables, garlic, rosemary, a pinch of salt and pepper. Saute for 5-6 minutes.
Serve and enjoy!!

I have been watching Tiger King on Netflix. Has anyone seen it? I am dying to discuss it. So many twist and turns and straight up unexpectedness.
I have been reading so many children's books to my daughter, I have been trying to distract her from the fact that we are not going on daily walks to the park, or picnics at the beach.
I also have been re-reading Harry Potter, just because it brings me great childhood memories and helps keep my mind away from Covid-19 and everything to do with it.
Let's all remember that Happiness can be found even in the darkest of times, If only one remembers to turn on the light. A great quote by J.K. Rowling Via Albus Dumbledore.
