South African BBQ

#bbqaroundtheworld South African style or as I learned they call it a Braai

Now, when I was researching the typical foods served at a Braai, I found many different dishes and I choose a couple I thought looked interesting. Honestly it amazes me that everyone in the world gathers around together to BBQ one way or another. It just brings everyone together. 

We don't need an excuse to Braai so let's get started.


Braai Spice Steak Printable Recipe

Ingredients
4 tablespoons coarse salt 
2 tablespoons white or brown sugar
2 tablespoons coriander seeds 
1 tablespoon black peppercorns 
1 tablespoon paprika or 2 teaspoons paprika plus 1 teaspoon cayenne 
1 tablespoon garlic powder 
1 tablespoon onion powder 
1 tablespoon dried thyme 
4 to 6 steaks, about 1 1/2 inches thick 

Directions

Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.

Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature 30 minutes before grilling. 

Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let rest 10 minutes and slice across the grain for serving.

Chakalaka Printable Recipe

4 Carrots - finely shredded
1 Green Bell Pepper - finely chopped
1 Red Bell Pepper - finely chopped
1 Onion - finely chopped
1 Tsp. Ginger - minced
2 Cloves of Garlic - minced
1 Tsp. Tomato Puree
1/2 Cup Tomatoes
1/2 Cup Baked Beans
1/4 Tsp. Turmeric
2 Tsp. Curry Powder
1 Tsp. Salt
1 Tsp. Freshly Ground Black Pepper
2 Tbsp. Oil

In a sauté pan, heat up the oil and the start sautéing the onion, after 2-3 minutes add in the garlic and ginger, sauté for another minute. Add in the turmeric and curry powder and stir. 


Add in your peppers, carrots, salt, freshly ground black pepper, and cook for 2-3 minutes. Add in the tomato paste, and tomatoes cook for a minute and finally add in the baked beans. Cook for an additional 3-4 minutes. Taste for seasoning and adjust if needed.


Serve and enjoy.


Harissa Chicken Wings Printable Recipe 
2 lbs. Chicken Wings
2-3 Red Peppers
1 Tsp. Cumin Seeds
1 Tsp. Coriander Seeds
1 Tsp. Caraway Seeds
3-4 Cloves of Garlic
2-3 Red Jalapenos, or Red Serrano
1/2 Cup Olive Oil
1 Tsp. Salt
1 Tsp. Freshly Ground Black Pepper
1 Tbsp. Honey

Rub the all of the peppers with oil and roast until charred. Once charred removed from heat and place into a bowl and cover with a kitchen towel, cellophane, or aluminum foil.

Once the peppers are cooled, remove the skin and seeds.


Place the cumin, coriander, caraway seeds in a pan and toast until fragrant about 1 minute. Grind the spices in a mortar and pestle or spice grinder.


In a blender, add in the peppers, garlic, spices, oil, salt and pepper, cover the chicken with the harissa paste and marinate for 4-6 hours. Remove from the refrigerator half an hour prior to grilling.


Pre-heat your grill, shake off excess marinade and grill wings 7-8 minutes on each side or until the internal temperature reaches 165 degrees Fahrenheit.


The last minute or two of grilling, baste the wings with remaining marinade after boiling it with a splash of water and 1 tbsp. honey. 


Remove from grill and let cool. Serve and Enjoy.


Tomato Salad Printable Recipe
1 lb. Cherry Tomatoes
4 Brussel Sprouts, thinly sliced
1/4 Cup Feta, crumbled
4 Baby Cucumbers, sliced
Handful of Basil Leaves 
1/2 Red Onion, thinly sliced
2 Tsp. Red Wine Vinegar 
4 Tsp. Olive Oil
Salt and Freshly Ground Black Pepper to taste 

Cut the cherry tomatoes into quarters and scatter on a plate. Add in baby cucumber slices, Brussel sprouts, red onion, basil, and crumbled feta.


Mix together red wine vinegar, olive oil, pepper, and salt and drizzle on top of salad and gently toss. Taste and adjust seasoning. Serve and enjoy.



Koeksisters Printable Recipe
2 Cups Sugar
1 1/4 Cup Water
Zest and Juice of 1 Lemon
Vegetable Oil for frying 
1 1/2 Cups All-Purpose Flour
2 Tbsp. Baking Powder
4 Tbsp. Unsalted Butter
1/4 Cup Milk
Pinch of Salt

Put the sugar and water into a sauce pan and heat until the sugar dissolves. Remove from heat and stir in lemon juice and zest; pour syrup into a bowl and let cool.


Sift together the flour, baking powder, and salt. Using a pastry cutter, combine the butter with the flour until the butter is well incorporated.


Add in the milk and mix your dough together until it becomes smooth. Let rest for 15 minutes.


Make the dough into 12 uniform balls and cut each ball into three strips, braid those strips together making sure the edges are secure. 


Fry the braids for 3-4 minutes or until golden brown on each side.


Remove from oil and dredge into syrup, them place on a cooling rack stacked on top of a cookie sheet to catch excess syrup. 


Serve and enjoy.
