Banana Muffins

If your house is anything like mine all your bananas are gone in a day or they sit on the counter for days until you have to make the decision to freeze them or throw them out.

These muffins are a perfect way to use up any bananas that no one wants to eat because they have brown spots all over.

Banana Muffins Printable Recipe
1/3 Cup Melted Butter
1/2 Cup Maple Syrup or Honey
2 Eggs
1 Cup Mashed Ripe Bananas (About 3 Bananas)
1/4 Cup Milk
1 Tsp. Baking Soda
1 Tsp. Vanilla Extract
1/2 Tsp. Salt
1 Tsp. Cinnamon
1 3/4 Cup All Purpose Flour
1/3 Cup Old-Fashioned Oats, Plus more for sprinkling on top
1 Tbsp. Raw Sugar, for sprinkling on top

Pre-heat the oven to 350 degrees Fahrenheit and grease your muffin pans, or you loaf pan if you are planning to make it into banana bread.

In a large bowl, mash your bananas, add in the melted butter and maple syrup and mix with an electric whisk until incorporated. 

Add in the eggs and beat well. Add in the milk and vanilla extract and mix.

Sift together the flour, baking soda, salt, and cinnamon together.

Add in the flour mixture and the oats to your banana mixture and mix until just incorporated.

Divide the batter evenly into your muffin tins and top with a sprinkling of oats and raw sugar. 

Bake for 20-25 minutes or until a toothpick inserted into a muffin comes out clean.

Remove from the oven and let cool. Run a butter knife along the outer edge of the muffins to loosen them from the pan. Serve and enjoy.

These are great topped with a little bit of butter and a drizzle of honey.
