As you can probably tell, I'm obsessed with all things pumpkin. Here's another one to try out if you're as obsessed as I am.
Pumpkin Sugar Cookies Printable Recipe
2 1/2 Cups All Purpose Flour
1 1/2 Cups Sugar
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 Tsp. Pumpkin Pie Spice
1/2 Tsp. Cinnamon
2 Tsp. Vanilla Extract
14 Tbsp. Unsalted Butter
1/2 Cup Pure Pumpkin Puree
1 Egg Yolk
1/4 Cup Granulated Sugar, for rolling
Sift together the flour, baking powder, salt, pumpkin pie spice, and cinnamon; set aside.
In a large bowl, using an electric mixer. Mix together the butter and sugar until light and fluffy about 3-5 minutes. Add the egg yolk, vanilla extract, pumpkin puree, and mix until fully incorporated.
Add in the flour mixture and mix. Cover and chill for 15-20 minutes.
Preheat your oven to 350F degrees. Using a cookie scoop, measure out your cookies and roll into the sugar. Place on a cookie sheet sprayed with nonstick spray and bake for 10-12 minutes.
Serve and enjoy!
