Roasted Pumpkin Seeds

Every year my family likes to have a pumpkin carving contest. Unfortunately for me, I was not blessed with any type of artistic skills what so ever. So I use the traceable stencils available, they are easy to use and it makes my pumpkin look great every year.

However, my favorite part of the pumpkin carving contest is all of the pumpkin seeds we have available after. Don't throw them out people!! These are great for snacking, topping salads, and soups.

Roasted Pumpkin Seeds Pizza FlavorPrintable Recipe
Seeds from 1 medium sized pumpkin, rinsed, drained, and dried
4 Tbsp. Olive Oil
2 Tbsp. Tomato Paste
1 Tbsp. Oregano
1 Tsp. Garlic Powder
1 Tsp. Salt
1/4 Tsp. Freshly Ground Black Pepper
1/8 Tsp. Red Pepper Flakes
1/4 Cup Parmesan Cheese

Preheat oven to 325 degrees F.

In a bowl combine the olive oil, tomato paste, oregano, garlic powder, salt, black pepper, and red pepper flakes. 

Toss in the pumpkin seeds, making sure each seed is coated, and place on a cookie sheet in one layer. Bake for 15 minutes.

Then toss with the Parmesan cheese and bake for an additional 10 minutes.

Serve and enjoy.

Roasted Pumpkin Seeds - Smokey Za'atar Printable Recipe
Seeds from 1 medium Pumpkin, rinsed, drained, and dried
4 Tbsp. Olive Oil
2 Tbsp. Za'atar
1 Tbsp. Smoked Paprika
1 Tsp. Salt
1/4 Tsp. Freshly Ground Black Pepper

Preheat oven to 325 Degrees F.

In a bowl combine the olive oil, za'atar, paprika, salt, and pepper. 

Toss in the pumpkin seeds, making sure each seed is coated, and place on a cookie sheet in one layer. 

Bake for 15-25 minutes, making sure to toss the seeds half way through.

Serve and enjoy.
