My 4th of July Entrees ladies and gents. Of course these are great all year around. Strike up your grills charcoal, gas, pellet, or whatever you have and let's get started.
Grilled Lemon and Herb Chicken (serves 6)Printable Recipe
6 boneless skinless chicken breast
3-4 tablespoons Extra Virgin Olive Oil
1 lemon zested and juiced
1 tbsp. Fresh Thyme (finely chopped)
1 tbsp. Fresh Rosemary (finely chopped)
1 tsp. Garlic Powder
1 tsp. Onion Powder
1 tsp. Salt
1 tsp. Freshly Ground Black Pepper
Pound your chicken breast to 1/2 inch thickness. This insures even cooking. Place your chicken breast into a bowl and cover with the remaining ingredients. Stir make sure to coat each and every piece of chicken. Let marinade for a minimum of 2 hours.
Make sure to pre-heat your grill. Grill the chicken breast 3-4 minutes on each side. Remove from grill and let rest for 5-10 minutes.
Grilled Short Ribs Printable Recipe
2 lbs. Flanken Style Short Ribs
2 tablespoons Worcestershire Sauce
1 tablespoon Olive Oil
1 tablespoon Olive Oil
1 tsp. Freshly Ground Black Pepper
1 tsp. Garlic Powder
1 tsp. Onion Powder
1/2 tsp. Salt
Mix everything together and let marinade for a minimum of 4 hours.
On a pre-heated grill. Grill for 3-4 minutes on each side and let rest for a couple of minutes.
Serve and Enjoy!!
I will also be serving hot dogs as children love those and you can keep a ton of them on the cheap. I like to keep both Vegan and Non-Vegan Dogs available. Because again, I want to make sure all of my friends and family feel included. I'm going to be honest and tell you I keep two different grills going for this occasion. One to cook non-meat items (including the vegan dogs) and one for strictly meat. That way my vegan friends don't have to worry about cross contamination.
Topping the hot dogs are up to each individual of course. However, I will have a little bucket of ice and the following toppings to choose from: Mayo, Mustard, Ketchup, Relish, a small plate of diced onion and jalapeno will also be available.
