4th of July Sides

Side dishes should be easy and delicious. I don't like to worry too much about making side dishes, when I have to worry about entertaining a crowd.

Grilled Corn
The first on my list of side dishes. It doesn't get any easier then throwing whole non-husked corn onto the grill and letting them cook for 15-25 minutes. Let cool slightly and peel. I always have some Salt, Limes, Chili Powder, and Butter on hand for whomever is so inclined. You can absolutely add those back onto the grill after you've seasoned them for a little extra char or just eat as is.

Veggie Kabobs
1 green bell pepper 
1 red bell pepper 
1 onion 
1 lb. small mushrooms
1 zucchini 
2 Yukon gold potatoes boiled for 5 minutes, let cool, 
3-4 tablespoons Extra Virgin Olive Oil
1 lime zested and juiced
1 tsp. Salt
1 tsp. Freshly ground Black Pepper 
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder 
1 tsp. Oregano 

Directions

Soak your skewers in water for at least 10-15 min. Cut each of your vegetables up into 1 inch pieces. 

Mix together the olive oil, lime, salt, pepper, garlic powder, onion powder, and oregano in a bowl and toss your veggies in there. Make sure each and every piece is coated in the marinade. 


Start making your skewers by layering different vegetables on to them. Grill for 5-10 minutes depending on how hot your grill is.
